Our second seasonal espresso feature from Fazenda Um’s latest harvest is the Fazenda Um Supreme, a pulped natural Catucai 785 varietal.

Fazenda Um was founded by Stefano Um in 2011. Stefano, who was a son of South Korean immigrants in Brazil, spent most of his working career in electronics. As he approached retirement, Stefano started thinking about turning his passion for coffee agriculture into reality.

In 2011, together with his sons Garam and Boram, the Um family took over an existing farm in the South of Minas Gerais that was already known for producing specialty coffee internationally. To further expand the potential of Fazenda Um’s coffees, the family founded Um Coffee Co in 2014, which is a coffee shop, roastery and coffee school in Sao Paulo. Since then, the Um family have focused their efforts on elevating Brazilian coffees through innovations in production, and honing their skills in coffee competitions, and every year they continue to push the boundaries of Brazilian specialty coffee.

The Um family have two coffee plantations in one of the biggest coffee growing regions in Brazil, Mantiqueira de Minas. Fazenda Um Minas Gerais, the Um family’s first property, was started in 2019 and is a 595 hectare farm with only 161 hectares of coffee plantation. They grow traditional Brazilian varietals, like Red Catuai, Yellow Bourbon and Mundo Novo.

Their second farm, Fazenda Um Espirito Santo, where this coffee is from, has only 28 hectares of plantation. It was acquired in 2019 and is where microlots and exotic varietals like this coffee are grown. With its complex and unique microclimate, the farm has been producing high quality lots and experimenting with new processing methods to unlock what the region has to offer.

The name “Supreme” is given to coffees up to 87 points from unique regions in Brazil called Bateia, the only region where you can find coffees of these taste profiles. This Catucai 785 varietal underwent a pulped natural process commonly carried out in Brazil, where the skin is removed from the coffee cherry and the mucilage remains intact during drying.

We enjoy this coffee for its sweet and comforting flavors of prune, milk chocolate and hazelnut.
